As we become more conscious of what we eat and the advantages thereof, we understand how important it is to equally consume as many vegetables as we do meat. The Roasted Veg & Orzo Salad is ideal if you’re looking for a light and tasty lunch or dinner meal.

Traditionally the first thing that comes to mind when you hear “salad” is a bowl of raw vegetables with lettuce and dressing. Well think again, this salad has roasted vegetables, pasta, feta and a delicious vinaigrette. This Roasted Veg & Orzo Salad not only tantalises the taste buds but also covers every aspect of nutrition. It’s packed with vitamins, minerals and macro-nutrients.

Roasted Veg & Orzo Salad Recipe

  • 2 large 2 Zucchini

  • 2 large 2 Aubergine

  • 1 large 1 Red onion

  • 1 1 Red pepper

  • 1 small 1 Butternut, peeled

  • 1 cup 1 Cooked orzo

  • 5 sprigs 5 Thyme

  • Feta cheese

  • Vinaigarette
  • 100 ml 100 Olive oil

  • 100 ml 100 Red wine vinegar

  • 1 tbsp 1 Brown sugar

  • 1 tsp 1 Dried Oregano


  • Preheat oven to 180°C.
  • Cube all veg roughly at 5 cm to ensure the veg cooks evenly.
  • In a mixing bowl, add veg, chopped garlic, thyme, a pinch of salt, pepper, drizzle with oil & toss.
  • Roast in oven for 20 minutes and check.
  • Once the veg is cooked, empty the oven try into the mixing bowl, add Orzo, drizzle vinaigrette and topped with crumbled feta.
