Whenever you imagine a salad, you often think about some leaves, raw vegetables and a bit of a dressing that actually provides the flavour, but it doesn’t have to be. If you travel across Europe, you can find some more hearty salads that can become whole meals. That’s why you need to try this roasted veg and orzo salad. With your favourite vegetables, some delicious pasta and orzo covered in a zingy vinaigrette, you’ll have a meal to remember.

Roasted veg and orzo salad suggestions

Orzo is a form of short-cut pasta, shaped like a large grain of rice. Orzo is traditionally made from flour, but it can also be made of whole grain. The eggplant adds a meatiness to the dish along with roasted butternut to add to the heft. The other vegetables are also there to add texture and flavour to the dish along with the pasta. The simple vinaigrette adds some freshness, giving it some zest and balancing the flavours.

Roasted veg and orzo salad recipe

Ingredients

  • 2 large 2 Zucchini

  • 2 large 2 Aubergine

  • 1 large 1 Red onion

  • 1 1 Red pepper

  • 1 small 1 Butternut, peeled

  • 1 cup 1 Cooked orzo

  • 5 sprigs 5 Thyme

  • Feta cheese

  • Vinaigrette
  • 100 ml 100 Olive oil

  • 100 ml 100 Red wine vinegar

  • 1 tbsp 1 Brown sugar

  • 1 tsp 1 Dried Oregano

Method

  • Preheat oven to 180°C.
  • Cube all veg roughly at 5 cm to ensure the veg cooks evenly.
  • In a mixing bowl, add veg, chopped garlic, thyme, a pinch of salt, pepper, drizzle with oil & toss.
  • Roast in oven for 20 minutes and check.
  • Once the veg is cooked, empty the oven try into the mixing bowl, add Orzo, drizzle vinaigrette and topped with crumbled feta.
