Ingredients

  • 200 g 200 kale, chopped

  • 8 8 baby potatoes, peeled & halved, or one large potato peeled & diced into cubes

  • 25 g 25 butter

  • ½ pack ½ smoked bacon

  • 100 g 100 blue cheese

  • 100 g 100 walnuts

  • 1 tablespoon 1 sherry vinegar

  • juice of ½ lemon

  • seasoning to taste

Method

  • Blanch the baby potatoes for 8 minutes.
  • Blanch the kale in salted boiling water for 3 minutes, refresh in cold water, drain and pat dry using some kitchen towel.
  • Chop the bacon into 1 cm slices and fry off in the butter until crispy in a large frying pan.
  • Add the cooked potatoes and walnuts. Stir in the kale and sherry vinegar, tumble the ingredients together and sauté for a few minutes, then crumble in the blue cheese.
  • Add a squeeze of lemon juice and season to taste.
