Braai Salad Pie

Summer is around the corner and the more time we spend outdoors, the better. Make summer extra enjoyable with this braai salad pie. It is a clever and tasty combination of all the old favourite salads usually accompanying a barbecue.

This braai salad pie is prepared in layers in a greased springform pan. The first layer is a piquant potato salad, followed by crispy carrots and then a tasty duo of peas and corn. The layers are then repeated until the springform pan is full. Then the salad is placed in the fridge for 24 hours to set.

Just before serving, the salad pie is topped with a mouth-watering mayonnaise and condensed milk combo, garnished with cherry tomatoes and sprinkled with cheese. So, instead of having three separate salads, this braai salad pie will do the trick.

This salad works well in hot weather since it is served chilled after setting in the fridge for 24 hours. And be prepared to share the recipe. This unique salad will definitely attract attention and compliments. It may even steal some of the limelight from the meat sizzling on the coals.

Ingredients

  • 5 cups potato salad (diced small)

  • 2 cups carrot salad

  • 2 cups frozen peas and corn

  • cherry tomatoes, halved

  • 1 cup mayonnaise

  • ½ cup condensed milk

  • 1 cup grated cheese

Method

  • In a greased springform pan, start with a layer of potato salad, forming the base of the salad. Press it firmly down.
  • Spoon a layer of carrot salad over. Then a layer of frozen peas and corn. Repeat the layers until the pan is filled to the brim. Cover with cling wrap and place in the fridge overnight.
  • Remove the springform. Mix the mayonnaise and condensed milk and pour over the salad.
  • Cut the cherry tomatoes in half and place on the outside of the salad. Sprinkle cheese over and cut in slices.
