This tuna frittatas recipe is one of those very versatile recipes. If you do not have potatoes, you can use any other vegetables such as sweet potato or zucchinis for a delicious meal. You can also experiment with salmon or smoked haddock for a mouth-watering variation. If you like some sting to your food, add a dash of cayenne pepper.

Most of the ingredients will already be in your pantry. So, no need for an extra trip to the grocery store. These tuna frittatas are delicious served warm or cold. If you serve them warm, make sure the frittatas are not too hot as that will affect the flavour of the dish. For a light lunch, serve the frittatas with a crunchy salad. The next day, make some tasty sandwiches with the leftover frittatas.

Ingredients

  • 2 tins tuna

  • ¼ cup parmesan cheese

  • 2 potatoes, grated

  • 1 carrot, grated

  • 1 bunch of grass onions, sliced

  • 4 tablespoons pickled jalapeños, chopped

  • 4 cups all-purpose flour

  • 5 eggs

  • coconut oil for frying

  • salt and pepper to taste

  • lemon pepper

Method

  • Combine all ingredients together in a bowl. Ensure that it is well mixed.
  • Add lemon pepper to taste, salt and black pepper.
  • Place a frying pan on medium heat and add the coconut oil. When heated, add spoonfuls of the tuna mix in the frying pan, about 3 to 4 at a time, depending on the size of the frying pan. The frittatas will automatically come loose easily when done, turn over and continue frying for about 5 minutes on each side.
  • Remove when done and keep warm.

Notes

  • Serve hot or cold with a side salad.
