When you want to celebrate, cake is always an option. This simple strawberry shortcake recipe is sweet, moist and absolutely beautiful.

Cake is the universal celebration food. A cake can serve many people and it always provides so much joy every time you even see one. Baking a beautiful cake doesn’t need to be a chore and a simple strawberry shortcake is one of those recipes anybody can try. The cake is a simple cake recipe making two layers of cake, strawberries and your choice of ice cream or whipped cream.

Strawberry shortcake hints

You’ll want to macerate some of the strawberries by softening them with a fork and first and then mixing them with a third of their weight in sugar. This will soften them fully and almost turn them into a jam. The hardest part will be to figure out how to go about decorating because there are so many options. You can also add your own mixture of berries according to your creativity and tastes.

Ingredients

  • 2 cups flour

  • ½ cup butter

  • ½ tsp salt

  • ¾ cup milk

  • 4 flat tsp baking powder

  • strawberries

  • whipped cream (or vanilla ice cream)

Method

  • Preheat the oven to 230°C.
  • Mix together dry ingredients and sift twice.
  • Work-in butter with fingertips and add milk gradually. 
  • Knead lightly on a floured board and pat into a baking tin
  • Bake in a very hot oven at 230°C for 12 minutes.
  • After it is baked, turn out of the tin onto a large platter, cut in half and butter each half.
  • On one of the layers spread prepared strawberries (mashed with a fork and sweetened to taste and left to stand while the dough is prepared).
  • On top of the strawberries place a layer of ice cream (or sweetened whipped cream).
  • On the top layer decorate the whipped cream any way you’d like and add whole or halved strawberries.
