Don’t you just love the warm rich flavour of pancakes filling your kitchen on a cold winter’s day? It instils a feeling of comfort and a sense of belonging. This pancakes recipe is easy to whip together and within about 30 minutes you will have your tasty bites baked, flipped and ready to be served.

Whether you like your pancakes with cinnamon and sugar or with a fancier topping, these tasty bites remain a firm favourite among many. For this recipe, we have served it with a variety of fruit.

Stack your pancakes high and add some bananas, strawberries and pomegranates. Next, add a swirl of honey or golden syrup and garnish with mint leaves. The colourful display is as appetising as it looks.  

Serve for breakfast, lunch or dinner. If you have some leftovers, you can even enjoy them as an anytime snack. So, if you have not flipped some pancakes this winter, make sure you do so now!

Ingredients

  • 180 g 180 all-purpose flour

  • 20 ml 20 baking powder

  • 5 ml 5 salt

  • 4 4 eggs

  • 1 litre 1 milk

  • 120 g 120 butter, melted

  • 1 tablespoon 1 sugar

Method

  • Sift the flour, baking powder and salt together.
  • Mix the eggs, milk, and melted butter.
  • Add the liquid ingredients to the dry ingredients, mix just until smooth.
  • Depending on the size pancake desired, measure about 30 – 60 g portion of the batter onto a greased preheated pan.
  • Pour the batter into the frying pan, fry the pancakes until the tops are full of bubbles and begin to look dry and the bottoms are golden brown. Then, turn and brown the other side.
  • Remove from the pan and serve with bananas.
