Decadent, tiny chocolate bites, anyone? This Chocolate Madeleines recipe is a dainty French sponge cake covered in chocolate. Perfect for those moments when you want to serve a high tea.

These traditional small sponge cakes are usually baked in tiny pans with shell-shaped depressions. What makes these Madeleines even more appetising is the addition of chocolate. Simply melt the chocolate, dip the Madeleines in them and sprinkle with nuts. A feast for the eye and the taste buds!

These delicate Chocolate Madeleines are so appetising looking that your guests will ask you where you have bought them. To which you can surprise them that you are actually the master baker of these cute little French enjoyments.

Preparing these Chocolate Madeleines takes quicker than you can imagine. Since the sponge cakes are so tiny, it only takes about 10 minutes to bake. So, in less than an hour, you can have these chocolaty bites ready to serve.

Ingredients

  • 120 g butter, butter

  • 2 large eggs

  • ½ cup castor sugar

  • ½ cup dark brown sugar

  • 1 teaspoon vanilla essence

  • ¼ cup cocoa powder

  • 1 cup cake flour

  • ½ teaspoon baking powder

  • 100 g milk chocolate (optional)

  • chopped hazelnuts or pecan nuts for decoration (optional)

Method

  • Preheat the oven to 190°C.
  • In a heatproof jug, melt the butter in the microwave and set it aside to cool.
  • Use a pastry brush to lightly coat a 12-cup madeleine pan with some of the melted butter.
  • In a large bowl, whisk the eggs, castor sugar, brown sugar, and vanilla essence together. Beat for one minute until the eggs become frothy on the top. Sift in the cocoa and stir till combined.
  • Sift in half the flour and use a spatula to mix the flour and egg mixture together. Sift in the rest of the flour and baking powder and combine.
  • Gently fold the melted butter into the mixture till well combined.
  • Spoon one teaspoon of batter into each madeleine cup and bake in the oven for 10 minutes.
  • Place the madeleines on a wire rack and leave to cool.
  • Enjoy on its own or dip the madeleines in chocolate and sprinkle with nuts as extra.
