What makes the motherland Africa so unique is our wonderfully diverse cultures and traditions. When it comes to food in particular, the continent boasts a very wide variety of cuisines and delicacies spread across our various societies. And we can’t deny that there is nothing that brings us all together like food. In celebration of Africa day, I am sharing a traditional Malawian dish called Zitumbuwa.

What is zitumbuwa

Zitumbuwa, or banana fritters, is a favorite Malawian snack. Typically made from corn flour, bananas, sugar and then deep-fried, there are many variations to this dish.

The main ingredient in zitumbuwa is banana. This is one of the cheapest but tastiest snacks that you can buy on the road side or in markets in Malawi. Zitumbuwa are cheap and simple to make . Of course if you want to improve on the taste you can add other ingredients such as whole wheat flour, milk, eggs, and butter. A typical Malawian zitumbuwa is made of maize meal, bananas, baking soda. In this recipe, I will be adding milk and eggs.

Health benefits of bananas

Bananas are one of the best fruit sources of vitamin B6. Vitamin B6 from bananas is easily absorbed by your body and a medium-sized banana can provide about a quarter of your daily vitamin B6 needs.

One medium-sized banana provides approximately 13% of your daily manganese needs. Manganese helps your body make collagen and protects your skin and other cells against free radical damage.

Bananas are also high in potassium which helps your body maintain a healthy heart and blood pressure. In addition, bananas are low in sodium. The low sodium and high potassium combination helps to control high blood pressure.

  • 10 ripe bananas

  • 1/2 cup milk

  • 1 1/2 cups maize meal

  • 1/2 teaspoon salt

  • 2 eggs

  • 1 teaspoon baking soda

  • cooking oil for frying


  • Mash bananas.
  •  Add eggs and  milk to the bananas and mix well.
  • Add salt, baking soda and maize meal to the banana mixture and mix well. The consistency of your mixture must not be too hard neither too soft or runny. If the mixture is too hard add more milk, if it is too runny, add maize meal.
  • Heat oil in a deep pan.
  •  Use the mixture to form balls, the size of your ball will depend on your size of fritter.
  • Take your ball and put it on the palm of your hand, then use your four fingers to flatten the ball.
  • There after fry the mixture until light golden brown. Turn to cook on all sides until light golden brown.
  • Remove with slotted spoon to paper towels to absorb oil.
