Peri-peri chicken potjie: A spicy weekend lunch for the whole family

When the weekend arrives, it’s time to cook for all of your friends and family. Make this peri-peri chicken potjie with fluffy rice for all of them.

The weekends are here for spending time with family and eating all of the food. One of South Africa’s favourites when they aren’t having a braai is doing a potjie day. Potjiekos or “pot stew” is cooked in a 3-leg cast-iron pot over an open fire. Usually, when it’s red meat, can take many hours to cook, however, this peri-peri chicken potjie takes about 2 hours. It’s a bit spicy, full of flavour can great for feeding a crowd of people on a sunny day.

Peri-peri chicken potjie suggestions

You can easily adjust the amounts for this meal with more chicken, stock and vegetables. You get your spice from paprika, peri-peri spice and rajah. Rajah is a style of curry powder which packs a good amount of flavour into each bite. Other than putting chicken on a braai, chicken doesn’t take as long to cook. When you have more in the pot, your cooking time will increase. Serve with some fluffy rice and a big smile.

Ingredients

  • 4 tbsp 4 oil

  • water to cover the chicken in potjie (or chicken stock)

  • 3 kg 3 chicken thighs and drumsticks

  • 1 kg 1 baby potatoes

  • 8 8 carrots peeled

  • 400 g 400 baby marrows

  • 300 g 300 green beans

  • 2 2 red onions, chopped

  • 2 2 white onions, chopped

  • 2 2 red peppers

  • 4 4 yellow peppers

  • 1 tbsp 1 Raja mild and spicy

  • 3 tbsp 3 paprika

  • 1 tsp 1 peri-peri spice

  • 1 1 red chillie

  • 1 1 green chillie

  • 6 cubes 6 chicken stock

  • 1 teaspoon 1 thyme

  • 100 g 100 brown onion soup

  • pinch pinch salt

Method

  • Heat the oil and add the white onion and let it brown.
  • Add all the spices and salt. Add the chicken pieces and fry until golden brown.
  • Add enough water or stock to cover the chicken. Cover the potjie and let it simmer for 30-minutes.
  • Add the vegetables, starting with carrots and cover the potjie for 30 minutes.
  • Add all the other vegetables, cover the potjie and let it simmer for 20-30 minutes.
  • Mix the brown onion soup and some stock, and pour over. Allow to simmer for another 5 minutes.
  • Serve with rice or steamed bread.
