Macaroni, chicken and veggie velouté – Stay warm this winter

A warm, hearty meal has never been easier to come by than this fragrant macaroni, chicken and veggie velouté. As the temperature drops this winter, this warm dish is perfect for any time of the day, whether it be a light lunch, in-between snack or main course. After the first bite, you will start feeling warm and crave another bite.

This is also the perfect meal for little ones as they are usually very fond of soft, warm pasta.

Prepare this macaroni, chicken and veggie velouté in less than an hour. This easy meal contains ingredients you most likely already have in your pantry, so no need for an extra trip to the groceries store.

Ingredients

  • 1 cup 1 dry macaroni pasta

  • 2 2 chicken breasts, cubed

  • 2 large 2 carrots, cubed

  • 1 small 1 onion, finely chopped

  • 2 cloves 2 garlic, finely chopped

  • 1 teaspoon 1 finely chopped ginger

  • 100 g 100 bread/cake flour

  • 100 g 100 salted butter

  • 1.3 liters 1.3 chicken stock

  • 1 cup 1 frozen corn

  • 1 tablespoon 1 cooking oil

  • black pepper

  • pinch pinch of salt

  • parsley for garnish, chopped

Method

  • In a small pot, bring the chicken stock to a boil.
  • Add the macaroni and cook for 7 minutes. Remove the macaroni from the chicken stock, keeping aside the chicken stock for later use.
  • Drizzle oil over the macaroni to keep it from sticking.
  • Heat oil in a medium-sized pot on medium heat.
  • Add finely chopped onion and cook until translucent.
  • Add the cubed chicken, carrots, garlic and ginger and cook for a further 10 minutes.
  • Add the butter and allow to melt.
  • Add the flour and stir all ingredients together until the flour and butter forms a paste.
  • Slowly pour in the chicken stock while stirring to ensure nothing sticks to the bottom of the pot.
  • Allow to simmer for 5 minutes before adding corn, macaroni, salt, black pepper and garnish with parsley.
