Bring on the food, it’s time to pop it on the braai this summer. Being the braai master is not easy but it is easier when some of the meat you’ll be cooking is spiced already and just needs that char. Chicken is always a welcome sight at any outdoor cookout and our Lemon & Herb Chicken Sosaties aren’t any different. Sosaties are just Afrikaans for skewers but it doesn’t change how delicious they are. Everybody at the table will be grabbing these beauties, so we suggest making enough of them.

A good braai is about abundance. It’s not just abundance in terms of food, but it’s about the abundance of love, conversation, laughs and beverages. We celebrate food along with each other and our Lemon & Herb Chicken Sosaties are made with love. When marinating, you can also add some plain yoghurt, but make sure to scrape some of it off before putting them on the fire because it won’t help the browning of the meat. You can enjoy these great treats as one of the mains, but they are really good as starters too, especially if they’re on the smaller side. It’s all up to you.

Lemon & Herb Chicken Sosaties Recipe

Ingredients

  • 1/2 kg chicken, cut into cubes

  • juice from 2 lemons

  • half a pineapple (cut into cubes)

  • garlic and herb spices

  • 1 tsp olive oil

Method

  • MARINADE
  • Throw the oil, lemon juice and about a teaspoon of spices into a bowl and mix.
  • Now add in the chicken, and mix about for a few seconds
  • Pop this into the fridge and let it stand for 3 hours.
  • METHOD – SKEWER
  • Grab some metal or wood skewers (if you are using wood skewers, make sure you soak them in water to make sure they don’t go up in flames!)
  • Skewer the chicken and pineapple, alternating to how much you want on each skewer
  • This is cooked on medium heat (you are able to hold your hand over the grid for about 7 seconds) directly over the coals.
  • These should take about 15 minutes or so, and you’ll know when they are done when the chicken has turned white inside. I check by grabbing a piece off the end and testing it.

Notes

  • You can carry on basting the chicken with the leftover lemon juice marinade from before whilst cooking.
