It might be summer in South Africa but we still love a good ol’ bowl of heartwarming pasta. We also have great quality meat and our lamb sausage are world-famous. We combined these lamb sausage with penne pasta to create something special to enjoy with your friends and family. With Italian roots, this tomato-based sauce with onions, garlic and basil will always be a winner around the dinner table. Lamb Sausage & Tomato Pasta is traditional Italian with a twist.

There is a method behind using penne pasta for this great recipe. Sauce and pieces of tomato and sausage get trapped inside giving you the perfect bite every time. You can either dice the sausage into pieces or remove the casings completely and chop the meat up in the pan; it’s your choice. Remember to keep a cup or at least half of the pasta water because it emulsifies the sauce, creating that creamy texture. A tomato bases pasta sauce is always a winner and is very hard to get wrong, making it the perfect sauce of all time.

An easy pasta dish with sausage and feta in a tomato sauce.

Ingredients

  • 1 pack penne pasta

  • 4 lamb sausages

  • 1 onion, finely chopped

  • 2 cloves garlic, finely sliced

  • 200 g rosa/cherry tomatoes, chopped in half

  • 1 tsp mixed herbs

  • 1 tin chopped tomatoes

  • 2 tbsp brown sugar

  • feta cheese

  • 1 handful fresh basil

  • salt and pepper to taste

Method

  • Bring a large pot of water to a rolling boil over high heat. Cook pasta in boiling water until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Keep ½ a cup of the pasta water.
  • Fry the onion and garlic in a large saucepan until golden.
  • Add the mixed herbs, salt and pepper.
  • Slice the sausage into 2cm pieces and add the pan with the onions.
  • When the meat is cooked, add the baby tomatoes and tinned tomatoes. Add the brown sugar and simmer for 10 minutes.
  • Once the sauce has reduced and the tomato has cooked, add the pasta along with ½ cup of pasta water.
  • Stir well until all the pasta is coated with sauce. Add the basil and feta.
  • Season with salt and black pepper and serve while warm.
