You always see them in the bakery’s display case and they are so tempting. We are of course talking about chocolate Eclairs. The ones you buy at a bakery are often dry because they’re a day old and have lost their taste. Our Homemade Chocolate Eclairs are better than any you could buy at your local supermarket. If you’re a creative person, these tasty treats are also great because you can shape and decorate them any way that you want to. Everybody will be running toward the dessert table.

Even though these are great Homemade Chocolate Eclairs, they are not traditionally made with faux pastry. You will be using South African classic Tennis Biscuits as a base for your cream and chocolate toppings. Instant vanilla pudding is made with instructions on the box and is super delicious. Your preparation takes a little while but is well worth it. Refrigerating your chocolate eclairs makes sure that they are set well and don’t run all over the place, especially in South Africa.

Ingredients

  • 32 tennis biscuits (1 1/2 packets)

  • 1 packet 1 instant vanilla pudding

  • 200 ml 200 cream (cold)

  • 250 ml 250 full cream milk (cold)

  • Topping

  • 200 ml 200 cream

  • 2 cups 2 dark chocolate chips

Method

  • On a tray, pack and space 16 biscuits.
  • Mix the pudding, cream and milk to a thick consistency.
  • Using a piping bag, fill it with the mixture.
  • Pipe it on the biscuit, filling it from side to side. Repeat on all the biscuits.
  • Place another biscuit on top of the filling, creating a biscuit.
  • Refrigerate.
  • In a saucepan, heat the cream until it boils. Add the chocolate. Stir until the chocolate is melted.
  • Scoop spoon fulls over the eclair sandwich, let it drip from the sides.
  • Refrigerate for 15 minutes.
