Enjoy a delicious summer salad this season when preparing a prawn and mango salad. Loaded with fantastic flavours, this salad is the perfect bite to enjoy as a light lunch.

The combination of cooked king prawns with mango and avocado is a winning combination. With the added chilli and lime dressing, you will want to lick your plate afterwards. If you like a bit of a crunch you can add some seeds and nuts to the mix as well.

The best part of this prawn and mango salad is that you can whip together this easy salad in just 15 minutes or less when you have the cooked prawns ready. So, no need to spend hours in the kitchen this summer when you can prepare a quick light lunch for the family.

Ingredients

  • 2 ripe avocados, peeled and stoned

  • 2 ripe mangoes, peeled and stoned

  • 400 g large cooked and peeled king prawns

  • 6 tablespoons chilli and lime dressing

  • 2 tablespoons roughly chopped coriander

  • 170 g mixed spinach, rocket and watercress

Method

  • Cut the avocado into slices and chop the mango. Place in a bowl with the prawns and coriander. Gently stir in 4 tablespoons of the dressing.
  • Divide the salad leaves between 4 plates, then top each with the avocado and prawn mixture. Drizzle over the remaining dressing and serve immediately.
