Gingerbread Man – Bonding with the kids through food

It’s school holidays and baking is a great activity to enjoy with the kids, especially with it being so cold outside. Gingerbread cookies are spicy, chewy and always tasty with a good crunch on the outside. This Gingerbread Man recipe is all of the great things about gingerbread cookies with your own creative flair.

All of the ingredients including flour, bicarbonate soda, butter, eggs, sugar and spices are probably already in your home. Make sure you have a Gingerbread Man cookie cutter ready with your other decorating ingredients. Use decorating icing, chocolate chips or any other sweet treats to decorate your gingerbread man cookies. It’s so easy to make that even your kids can make it.

It’s time for bonding during the cold South African winter. These gingerbread cookies are perfect for baking with the family.

  • 350 g 350 cake flour, plus extra for rolling

  • 1 tsp 1 bicarbonate of soda

  • 2 tsp 2 ground ginger

  • 1 tsp 1 ground cinnamon

  • 125 g 125 butter

  • 175 g 175 light brown soft sugar

  • 1 1 egg

  • 4 tbsp 4 golden syrup


  • Sift together flour, bicarbonate of soda, ginger and cinnamon, and pour into the bowl of a food processor. Add the butter and blend until the mixture has the appearance of breadcrumbs. Stir in the sugar.
  • Beat the egg and syrup together lightly, add to the flour mixture and pulse until the dough clumps together. Tip out, knead briefly until smooth, wrap in Clingfilm and chill in the fridge for 15 minutes.
  • Roll out the dough on a well-floured surface (this is very important to ensure the dough does not stick to the surface when transferring them) until it’s 5mm thick.
  • Cut into shapes using a gingerbread men cookie cutter.
  • Place them onto the trays leaving spaces in between in case they spread.
  • Bake for 12-15 minutes.
