Pumpkin fritters – Fluffy, cinnamony South African bites

We are well into the winter season and all we long for is some comfort food. The characteristic flavour of pumpkin fritters is just what we need on a shivering cold day. Fried to delectable crispiness on the outside with softness inside, these pumpkin fritters are simply mouth-watering.

Whipping up a batch of pumpkin fritters are quickly and easy. You can serve them as a side dish with your main meal. Sprinkle some cinnamon and sugar for a sweet bite or enjoy as is. Drizzle little lemon juice for a zesty zing to the fritters.

Alternatively, enjoy it as a dessert by spooning some syrup (recipe below) over the pumpkin fritters. Add a dollop of cream for the ultimate sweet treat. You will be surprised at how delicious veggies can transform into a dessert.

Ingredients

  • Pumpkin fritters
  • 500 ml 500 cooked pumpkin

  • 250 ml 250 flour

  • 10 ml 10 baking powder

  • 2 ml 2 salt

  • 5 ml 5 ground cinnamon

  • 1 large 1 egg, beaten

  • cooking oil

  • Syrup
  • 15 ml 15 butter

  • 250 ml 250 sugar

  • 200 ml 200 milk

  • 30 ml 30 lemon juice

  • 2 sticks 2 of cinnamon

Method

  • Pumpkin fritters
  • Place the pumpkin in a bowl and mash.
  • Stir in the flour, baking powder, salt, cinnamon and mix well.
  • Stir in the beaten egg and mix again.
  • Heat the oil and with a spoon add the pumpkin mixture in the heated oil and fry until brown on both sides.
  • Syrup
  • Heat all the ingredients for the syrup, bring to a boil and simmer for 15 minutes.
  • Pour the syrup over the pumpkin.
