After long, cold nights during the South African winter, we’ve been eating rich, hearty meals to keep us warm and cosy. However, sometimes we want to lighten it up with something fresh. The Fresh Mint & Avocado Salad is perfect for a change of pace when it comes to your winter meals and is perfect for anybody looking after their health. It is fresh, bright, tasty and full of different textures.

The Fresh Mint & Avocado Salad includes baby spinach packed with Vitamin K and iron. It also has veggies such as tomato, red cabbage, mint and the healthy fats of avocado. It’s a raw veggie and fruit salad which brings all the nutrients to the table and is perfect for anybody following a plant-based diet.

The cooking time allocation refers to the brown rice but you can easily prepare it beforehand and use leftover rice as well. This will cut down on prep time and have your meal ready in no time. Each serving is only 401 calories, so it fits well into your daily meals.

Fresh Mint & Avocado Salad Recipe

  • 1 medium 1 Chopped tomato

  • 100 g 100 Chopped cucumber

  • 1 cup 1 Chopped baby spinach

  • 15 g 15 Fresh mint leaves

  • 80 g 80 Avocado cubes

  • 90 g 90 Chopped red cabbage

  • 5 g 5 Sesame seeds

  • 1 cup 1 Brown rice

  • 1 pinch 1 Salt

  • 1 pinch 1 Ground black pepper

  • 2 tbsp 2 Lemon juice

  • 1 tbsp 1 Extra virgin olive oil


  • Place a pot of water onto the stove and wait until it starts to boil, then add the brown rice and cook until soft.
  • Chop the tomato, cucumber, baby spinach, avocado, some of the mint leaves and cabbage into small pieces.
  • Place into a large bowl and stir in the rice.
  • Drizzle the lemon juice, olive oil, salt and pepper. Combine until everything is mixed well.
  • Place onto a serving bowl and put a couple of mint leaves and sesame seeds as decoration.
  • Then it’s ready to serve.
