Mediterranean prawn pasta: A very quick meal that’s super tasty

What do you think is the best part about cooking seafood? Fish has that flaky and beautifully subtle flavour while shellfish gives a bit more of a salty seafood flavour. However, for many, it’s how quickly it cooks and is ready to enjoy. Our Mediterranean prawn pasta combines South Africa’s favourite shellfish and pasta styles and turns it into a delicious meal that the whole family can enjoy during those busy weeknights.

Mediterranean prawn pasta tips

When making pasta, make sure that your water is boiling and season with enough salt. Save some of that water to add to the pasta as you finish it. If you really want to finish your pasta like an Italian chef, add one or 2 portions of sauce, pasta and a bit of pasta water into a smaller pan. Then toss it together before adding a teaspoon of butter and toss until glossy.

Mediterranean prawn pasta recipe

In 25 minutes, you can make an impressive, mouth-watering, flavourful seafood meal for yourself, or your family and friends.  

Ingredients

  • 800 g 800 prawns, deveined

  • 500 g 500 penne pasta

  • 2 tsp 2 olive oil

  • 1 tsp 1 salt

  • 100 g 100 butter

  • 2 tbsp 2 olive oil

  • For the sauce
  • 1 tsp 1 crushed garlic

  • red pepper, deseeded and chopped

  • 1⁄4 tsp 1⁄4 fish spice

  • 1⁄4 tsp 1⁄4 cajun spice

  • black pepper and salt to taste

  • 2 2 chopped onions

  • 1 1 red chilli, deseeded (optional, and ou can use more)

  • 4 4 tomatoes

  • 1 tsp 1 paprika

  • 1 cup 1 cream ~ to be added before serving.

Method

  • Cook the pasta al dente, rinse, and add 2 teaspoons olive oil, mix to ensure it does not stick. (To cook pasta al dente, start by bringing a pot of water to a boil and adding the pasta to it. Then, after the pasta has been cooking for 6 or 7 minutes, try tasting a piece of it. If it is still crunchy, keep cooking it in 30-second intervals until it’s firm but no longer crunchy.)
  • For the sauce
  • Blend together the ingredients for the marinade.
  • Place butter in your frying pan, or wok, and stir fry prawns in the butter for 3-4 minutes on each side. Add salt, remove from pan and set aside.
  • In the same pan, fry the onions, ensuring you scrape all the juices, bits, and pieces for extra flavour.
  • Add the sauce from the blender and bring to boil, add the prawns and simmer for 2 to 3 minutes
  • When this is done you add the boiled pasta and cream, stir well, let the paste absorb all the awesome flavours.
  • Garnish with fresh coriander and black pepper before serving.
