Baking for your family or friends is one of those fun activities that never gets old. When you have a cup of tea or coffee ready to enjoy, you need to have a slice of tart or cake that you can snack on. This gluten-free almond and honey cake is just perfect for those enjoying a hot drink with friends. Almond cake has a subtle flavour which won’t overpower your drink of choice and it’s easy to put together before popping into the oven.

Almond and honey cake tips

Whether you’re gluten-free for health reasons or staying away from flour, almonds are a great alternative. Honey will naturally sweeten the cake and if you’re vegan, you can use an alternative sweetener too. The flaked almonds are great for a topping and you can change things up by adding other nuts and even adding fruit if you want more natural sweetness. Enjoy for a tasty tea time snack or dessert after dinner with your family.

Almond and honey cake recipe

This delicious almond cake is not overly sweet and makes the perfect afternoon tea treat. It is wholesome and delicious at the same time.

Ingredients

  • 2 cups 2 almond flour

  • 1 tsp 1 baking powder

  • 1⁄2 tsp 1⁄2 bicarbonate of soda

  • 1⁄2 tsp 1⁄2 salt

  • 4 4 eggs

  • 2⁄3 cup 2⁄3 honey

  • 1⁄4 cup 1⁄4 olive oil

  • zest of 2 lemons

  • Glaze and topping
  • 2 tbsp 2 lemon juice

  • 1 tsp 1 vanilla essence

  • 1⁄2 tsp 1⁄2 almond essence

  • 1⁄2 cup 1⁄2 icing sugar

  • 1⁄2 cup 1⁄2 flaked almonds

Method

  • Preheat the oven to 180°C. Grease a round cake tin and dust with flour to prevent sticking.
  • In a large bowl, add the almond flour, baking powder, bicarbonate of soda, salt, and cinnamon. Whisk to blend.
  • In another bowl beat the eggs with a whisk. Add the honey, olive oil, and lemon zest and whisk.
  • Add the wet ingredients into the almond flour mixture and stir.
  • Scrape the batter into the prepared cake tin. Bake for 40 minutes, or until the cake is golden brown and firm.
  • For the glaze
  • In a small bowl, mix the glaze ingredients.
  • When the cake comes out of the oven, drizzle the glaze over the warm cake. Top with flaked almonds and dust with icing sugar.
