Bees are very important to our daily lives and the best place to be while having this tasty treat is in a garden filled with bee-friendly flowers like lavender, honeysuckle, heather and thyme. You can go crazy with the berries you choose and will add loads of colour, sweetness and textures that go very well against the soft jelly. Top yours with some whipped cream if you’re looking for something extra.

Ingredients

  • 500 ml 500 Champagne or Prosecco

  • 100 ml 100 honey

  • 4 sheets 4 gelatine

  • summer berries to decorate

Method

  • Place the gelatine leaves in a bowl of cold water for 5 minutes until soft. Squeeze the leaves and discard the water.
  • Pour water into a medium sized pan of water and bring it to simmering point. Place a mixing bowl over the pan & pour in half of the the Champagne.
  • Add the gelatine and honey. Heat gently until the gelatine has dissolved.
  • Remove from the heat & pour in the remaining Champagne. Stir and pour the mixture into a jug.
  • Pour the jelly evenly across 6 glasses and refrigerate until set.
  • Finish with a sprinkling of your choice of summer berries.
