Grant Hawthorne’s recipe for chocolate studded Cape malva pudding

This dessert is a lighter version of sticky toffee pudding and is a speciality from Cape Town.

The sublime sweeter tastes of the sponge are offset by the addition of the bitter chocolate. This is remake of the classic traditional malva pudding.

The serving style is simple yet elegant, albeit a traditional comfort food. This dish goes well served with custard or vanilla ice cream.

Ingredients – SPONGE

  • 80 ml milk

  • 100 grams flour

  • 160 grams sugar

  • 1 pinch salt

  • 1 teaspoon bicarb

  • 2 eggs

  • 30 grams apricot jam

  • 15 grams melted butter

  • 15 ml red wine vinegar

  • 120 grams chocolate

  • 200 grams white sugar

  • 140 grams butter

  • 80 ml water

  • 80 ml milk

  • 320 ml double cream


  • Sieve all dry ingredients. Make a well and add the eggs.
  • Add the melted butter, jam and vinegar.
  • Add the milk. Reserve to one side. Line a greased and floured baking dish (deep). Bake at 200c for 30 minutes.
  • Remove briefly from the oven and stud the sponge with the chocolate pieces. Return to the oven for a further 10 minutes.
  • Bring all the ingredients to the boil in a separate pot. Pour gently over the hot sponge, and leave to soak for approx 20 minutes. Chill until set. Serve with custard or vanilla ice cream.
