With summer still in full swing, what is better than enjoying a fully loaded salad packed with green veggies and a mixture of nuts? This nutty green veggie salad recipe includes chopped peanuts, almonds and sunflower seeds. You may decide to use only one of these or make it an appetising crunchy festivity by adding all three. If you have other types of nuts in your pantry, you can also play around with other nuts when preparing this salad.

Apart from the delicious combo of greens with crunchy nuts, this recipe includes a delightful sesame seed dressing. This dressing consists of creamy peanut butter, almond butter or sunflower butter with maple syrup, rice vinegar and toasted sesame oil. Ingredients

  • Salad
  • ½ head ½ head romaine, washed, patted dry, and shredded

  • ½ – ¾ head ½ – ¾ head green cabbage, cored and shredded

  • 2 mini 2 cucumbers, thinly sliced

  • 1 bunch 1 scallions, ends trimmed and thinly sliced

  • ½ – 1 bunch ½ – 1 cilantro, stemmed and finely chopped

  • 1 cup 1 shelled edamame

  • ½ cup ½ chopped peanuts, almonds, or sunflower seeds (or a mix of all three), plus more for topping

  • 2 tablespoons 2 sesame seeds (optional)

  • Nutty sesame dressing
  • 3 tablespoons 3 creamy peanut butter, almond butter, or sunflower butter

  • tablespoons pure maple syrup

  • tablespoons rice vinegar

  • tablespoons toasted sesame oil

Method

  • For the salad
  • Add all salad ingredients to a large serving bowl.
  • For the dressing
  • In a medium mixing bowl, vigorously whisk together all dressing ingredients until completely smooth and emulsified.
  • Pour as much of the dressing over the salad as desired, and toss to coat.
  • Serve immediately and top with more nuts and seeds, if desired.
