Whether you’re running out of the door before work, you should never leave without breakfast. Making sure that you have energy helps wake you up but improves your brain’s performance throughout the day, even if you’ve had lunch. If you’re somebody who likes making your own snacks, you’ll love these berry and oat bars. They’re sweet but healthy treats which are great for a quick breakfast, mid- or post-workout treat and even just for those hungry moments throughout the day.

Berry and oat bars suggestions

Chances are that you already have most of the ingredients in your kitchen and you can use regular rolled oats or any berry preserve that you’ve got. If you make your own berry jam or preserves, that will work even better. You can also add other ingredients for fibre and antioxidants, among other nutrients, like raisins, chopped dates or dried berries. They’re nutritious but sweet and completely vegan and vegetarian-friendly.

Ingredients

  • ½ cup ½ coconut oil melted

  • cup all-purpose flour or gluten free substitute

  • cup quick oats

  • cup maple syrup

  • cup coconut sugar or granulated

  • 1 tsp 1 baking powder

  • ½ tsp ½ salt

  • ½ cup ½ raspberry preserves

Method

  • Preheat oven to 180°C. Spray an 20×20 baking pan with non-stick spray. Set aside.
  • Mix all ingredients in a large bowl, except for preserves.
  • Using your hands press ⅔ of the mixture into the bottom of your pan until it’s even and relatively flat.
  • Gently spread preserves, leaving 1cm around the outside. (The preserves will scald if up against the edge of the pan.)
  • Using your hands, evenly crumble the remaining ⅓ of the mixture over the top of the preserves and lightly press so the crumbles stay in place after baking.
  • Bake for 25-30 minutes on a center rack until lightly browned on top.
  • Let cool in pan on top of a cooling rack.
  • Cut and serve!
