Take advantage of the great weather we’ve got left and invite your friends over for a braai. You’re not just inviting them over for the great weather and emat though, but so that you can serve them more incredible food, especially in the form of great sides. These baked sweet potato parcels are a great addition to the braai but they’re also perfect for anybody who’s following a vegan or vegetarian diet. They’ve got all the hallmarks of a full meal, including chickpea protein so that you can have them as a full meal too.

Making baked sweet potato parcels

You can cook the sweet potatoes in the oven or wrapped in foil on the fire. However, you don’t want to overcook them because you want the skins to stay in tact a bit. The cream in the potato mixture can be changed to coconut cream and you can also blend some more chickpeas into this mixture too. The sauce is just as creamy and everything looks as beautiful as it tastes. If the skins are cooked well, they’re great for texture too. You can make the same parcels with halved gem squash too!
