Meatless Monday is an international campaign that was started to  encourages people to not eat meat on Mondays to improve their health and the health of the planet.

Whether this is for you or not, this homemade veg patty is delicious either way. Personally I am a big fan of a veggie burger as the flavour is more complex than just a traditional beef burger. Plus its so much better for you!

You can add any toppings of your choice, here are my favourites:

  • Crispy onions
  • Gherkins
  • Avo
  • Sauted mushrooms
  • Grilled pineapple
  • Emmental cheese
  • Mayo and chipotle sauce

This is the best veggie burger recipe! The patty is tasty and doesn’t fall apart when you cook it.

Ingredients

  • 2 cans black beans, drained, rinsed, and patted dry

  • 1 tablespoon extra virgin olive oil

  • 3/4 cup bell pepper, finely chopped

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 1 1/2 teaspoons ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon smoked paprika

  • 1/2 cup bread crumbs

  • 2 large eggs

  • 1 tablespoon Worcestershire sauce

  • pinch salt and pepper

Method

  • Sauté the chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about five minutes.
  • Place in a large bowl and add all the remaining ingredients, except the beans.
  • Mix everything together, then add the black beans. Mash with a fork or masher, make sure to leave some of the beans whole.
  • Form into patties of your size. Refrigerate the patties for 10 minutes.
  • Fry for five minutes on each side until cooked through.
  • Serve on a bun with toppings of your choice.
