Vegetable fritters – Sizzled to a golden-brown deliciousness

Feeling peckish? What about some vegetable fritters? These veggie bites are loaded with flavour. They will give you a good helping of veggies even though they are classified as a snack.

Zucchini, carrot and corn are a delicious combo for these vegetable fritters. Whip them together in less than an hour and serve them as savoury bites to guests who might be dropping by.

If you don’t have time to prepare a dipping sauce to go with these veggie bites, you can simply serve them with a dollop of plain yoghurt. The slightly sour taste of the yoghurt contrasts deliciously with the crispy fritters.

Ingredients

  • 2 small 2 zucchinis

  • 2 medium 2 carrots

  • 284 g 284 fresh or frozen corn kernels

  • 4 4 eggs

  • ½ cup ½ all-purpose flour

  • 2 cloves 2 garlic, minced

  • ¼ cup ¼ parsley chopped

  • 1 teaspoon 1 salt or to taste

  • 1 teaspoon 1 pepper or to taste

  • Oil for frying or baking

Method

  • Wash and grate the zucchinis. Squeeze handfuls of the grated zucchini tightly to remove extra water. Place it into a large mixing bowl.
  • Grate the carrots.
  • Add the grated carrots with the grated zucchinis. Also add corn, eggs, flour, garlic, parsley, salt, and pepper. Stir well to combine.
  • Place a large non-stick skillet over medium heat. Add about 2 tablespoons of oil. Once the oil is hot, add one heaped tablespoon at a time of the veggie mixture, and flatten out the tops slightly to make the fritters even.
  • Cook for 3 – 4 minutes per side, or until golden brown. If they brown too quickly, reduce the heat.
  • Serve warm with a dollop of yoghurt.
