If you’ve made basil pesto before, this recipe will be just as easy. If you want to keep the colour and freshness of the broccoli, don’t over-steam it and add it to an ice bath immediately. This will keep the broccoli from losing all its nutrients in the water and keep the colour as bright as possible. You can even blanch the broccoli in boiling water if you don’t like using a microwave. You have all the iron, calcium, Vitamin K, protein and carbs that you need for a complete meal.   • 90 g 90 Chicken breast

  • 2 cups 2 Steamed broccoli

  • 2 cups 2 Fresh basil leaves

  • 1 tbsp 1 Roasted pine nuts

  • 3 tbsp 3 Grated parmesan cheese

  • 4 tbsp 4 Extra virgin olive oil

  • 1 clove 1 Freshly chopped garlic

  • 1 tsp 1 Lemon juice

  • 3 cups 3 Wholegrain pasta

  • 1 pinch 1 Salt

  • 1 pinch 1 Ground black pepper


  • Place a pot of water onto the stove and wait until it starts to boil, then place the pasta into the boiling water and cook until tender.
  • Steam the broccoli in a microwave pot until soft. Let the steamed broccoli cool down before blending.
  • Fry the piece of chicken until fully cooked, in a shallow pan using 1 tablespoon extra virgin olive oil.
  • Blend together the broccoli, pine nuts, parmesan cheese (keep some for on top), remaining olive oil (3 Tbsp), garlic clove, lemon juice and salt and pepper until smooth.
  • Place cooked pasta into a strainer and strain the pasta.
  • Place pasta into a bowl and add the broccoli pesto on top, stir well and serve with a fresh basil leaf and some grated parmesan cheese.
