Tender Lamb Ribs baked in Oven

Is it raining outside, making it hard to light the braai and cook your beautifully marinated ribs? Well, cooking your ribs in the oven can be just as tasty and if you’re not too confident about cooking on an open fire, the oven provides you with peace of mind. The marinade makes up most of the effort anyway and will flavour your oven-baked lamb ribs to perfection as well as tenderizing them to that they pretty much fall off the bone.

Oven-baked lamb ribs tips

This recipe is for about a kilo of ribs but you can adjust the amounts as you see fit depending on how many people you’re about to feed. You can either bake them on a tray or just double-wrap them with foil. To crisp-up the outside, make sure to have some extra marinade and baste them before turning the oven to grill for a few minutes. You can also use beef or pork ribs with the same recipe. Serve with salad and crispy potatoes with a mint dipping sauce.

Oven-baked lamb ribs recipe

  • ±1.3 kg ±1.3 lamb ribs

  • juice of 1 lemon

  • Balsamic vinegar

  • coarse salt

  • black pepper

  • garlic flakes or powder

  • olive oil


  • Rub the ribs with the juice of the lemon, balsamic vinegar, coarse salt, black pepper, garlic flakes and olive oil.
  • Place the ribs in an oven tray. Cover the ribs and let them marinate for at least 1 hour, the longer the better. If possible, keep it in the fridge.
  • Preheat the oven to 150°C / 302°F.
  • Place the lamb in the roasting rack and cover with tin foil and bake for 2 hours. If you like crispy ribs, you need to remove the cover during the last 5 minutes of the cooking time and set the oven to grill.
  • Serve with yoghurt and mint sauce.
