Sausage Penne Pasta With Feta

As the holiday season draws near, you know that your family is coming over more often and you need some great food to feed them. However, you don’t need to get all fancy but cook something that’s simple and easy to adjust for what you have available. Pasta is one of the best ways to have a meal ready in a short amount of time. Our lamb sausage pasta is saucy and a slice of food heaven that’s ready under 30 minutes.

The lamb sausage is rich and goes very well with a tomato-based sauce, but you’re more than welcome to use pork sausage or even boerewors for taht South African twist. If you have leftover sausage from a braai, your cooking time is cut down even more. Remember to keep some f the pasta water which helps thicken the sauce and makes it stick to the pasta. Serve with a generous helping of black pepper and parmesan cheese.

An easy pasta dish with sausage and feta in a tomato sauce.

Ingredients

  • 1 pack penne pasta

  • 4 lamb sausages

  • 1 onion, finely chopped

  • 2 cloves garlic, finely sliced

  • 200 g rosa/cherry tomatoes, chopped in half

  • 1 tsp mixed herbs

  • 1 can chopped tomatoes

  • 2 tbsp brown sugar

  • feta cheese

  • 1 handful fresh basil

  • salt and pepper to season

Method

  • Bring a large pot of water to a rolling boil over high heat. Cook pasta in boiling water until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Keep 12 a cup of the pasta water.
  • Fry the onion and garlic in a large saucepan until golden.
  • Add the mixed herbs, salt and pepper.
  • Slice the sausage into 2cm pieces and add the pan with the onions.
  • When the meat is cooked, add the baby tomatoes and tinned tomatoes. Add the brown sugar and simmer for 10 minutes.
  • Once the sauce has reduced and the tomato has cooked, add the pasta along with the 12 cup of pasta water.
  • Stir well until all the pasta is coated with sauce. Add the basil and feta.
  • Season with salt and black pepper and serve while warm.
