You’re home more often this time of year and it’s time to make all of your favourite snacks. The classic toasted bacon and cheese sandwich is one of the world’s favourite treats. With streaky melted cheese and crispy, salty bacon, you have the best ingredients sandwiched between perfectly toasted slices of bread. It’s a platform to add more flavours that will brighten this rich goodness. Atchar, a South African pickled condiment, is tangy and perfect with this iconic sandwich. The Toasted Bacon & Cheese with Atchar will bring incredible smells into your home and taste even better when done.

The ingredient list is low and cooking them is easy but, there are some choices. Often, we use butter and maybe a bit of olive oil when toasting our bread. Mayonnaise will be a new revelation. Not in the recipe below, but great as fat for toasting, mayonnaise is easy to spread and will give an even, golden brown toast on the outside of the bread. Your Toasted Bacon Cheese with Atchar will be gooey, salty, rich and tangy all in one bite. You will never want another snack for lunch this summer.

Toasted Bacon & Cheese with Atchar Recipe

Ingredients

  • 4 slices sourdough bread

  • butter

  • 2 tbsp atchar

  • 4 rashers bacon (or cold meat of your choice)

  • ½ cup grated cheese

Method

  • Spread a thick layer of butter on the outside of the sandwich.
  • Add the cooked bacon and cheese.
  • Spread a layer of atchar on two slices of bread.
  • Heat a frying pan over medium heat.
  • Add the sandwiches to the frying pan and put a plate on top to press the sandwich down.
  • Grill on each side for 3 – 4 minutes until the bread is golden brown and the cheese has melted.
  • Remove the pan and cut in half.
  • Serve with a salad or chips.
