Summer is here and it also means that the festive season is coming too. When you have lots of friends and family coming over, you don’t want to spend all of your time cooking and a seafood braai might be the answer. Do you remember when dad put the long snoek on the braai with apricot jam and you wondered how it would taste before devouring it all? Well, now you can make your own buttery apricot jam snoek for your whole family.

Buttery apricot jam snoek tips

Snoek, a type of snake mackerel is one of, if not the most, popular fish in South Africa. It’s quite flaky with many bones so it falls apart quite easily, so you’re going to need a folding grid for the braai. You want to keep basting the fish and if your coals are at the correct temperature, should only take about 7-minutes to cook on each side. The most iconic side dish for this recipe is roasted sweet potato which you can just cover in foil and cook directly on the coals.

Ingredients

  • 1 snoek (Defrosted)

  • GLAZE
  • 125 ml butter

  • 100 ml apricot jam

  • 50 ml lemon juice

  • 4 tbsp chicken or fish spice

  • 1 crushed garlic clove

  • chilly (optional)

Method

  • In a saucepan, bring all glaze ingredients to a boil.
  • Rub the snoek with coarse salt before braaing. Wash off the salt before placing on the grill.
  • Wait for coals to become gentle enough to braai snoek.
  • Place your snoek in a folding braai grid. Place on a hot fire with the skin side downward. Baste the snoek regularly with the glaze. Braai for 20 min maximum, until the fish meat turns white.

Notes

  • Never defrost fish on a metal surface.
