When you want a real South African summer feast experience, it’s often cooked outdoors on an open fire. Even though we love a braai, there’s something special about potjiekos. This South African oxtail potjie might just be right at the top of the potjiekos tier thanks to the heaps of flavour the meat has alongside the layers of vegetables and spices you’ll be adding to the pot.

As with any stew, each stage of this recipe is important, but you don’t need to worry, because the video below shows you every single step. The meat will come out tender, the vegetables soft and the brother rich and tasty.
