You’re going to have the best braai this weekend. Get the perfect cut of porterhouse steak from your butcher and pop it on the wood braai.

If there’s one thing South Africans need to know how to do, it’s cook the perfect steak on the braai, especially a wood fire. Usually, your best cuts are best cooked on cast-iron, but we can’t help ourselves when it comes to a good ol’ braai. The smoke will also help flavour the porterhouse steak that you’re about to cook.

Make sure to ask your butcher for the best cuts, and maybe trim the fat for you a little bit. The marinade is made with peppers, fresh herbs, garlic and of course, red wine. Porterhouse is known for it’s T-bone shape with the fillet and porterhouse on either side. Cooking time will depend on the thickness of the beef, and you can follow the recipe below to show you exactly how it’s done.
