There are many food staples around Africa with pap and samp being the most popular. Did you know that couscous was a staple of African cuisine before it became part of a modern healthy lifestyle? You can make simple sides and full dishes with this couscous and peppers recipe.
Couscous is a good source of plant-based protein and fibre with a good amount of healthy carbohydrates. Other than great nutrition, the peppers add sweetness and flavour with some red onions which have a bigger flavour punch than the usual. The recipe below is simple weeknight cooking for the whole family or weekly meal prep.
