Who does not love a juicy, tender pork chop or two (three?) for dinner? Combined with a tangy pineapple-infused sweet-and-sour sauce and you have a winner meal.

Pork is one of the leanest meats you can get. That is why so many pork chops turn out dry and overcooked. Here are a few great tips to ensure your chops remain juicy and bursting with flavour. When purchasing chops, rather choose thicker cuts with a bone. Also, instead of using the oven, just sprinkle the pork chops with barbecue spice before frying them in an air fryer. It works like a dream! Say goodbye to dry and overcooked pork chops.

Serve the tender pork chops and sauce on rice. It soaks up the pineapple-infused sweet-and-sour sauce making this meal even more flavourful!

Ingredients

  • PORK
  • 5 pork chops

  • barbecue spice

  • SAUCE
  • 1 tin pineapple pieces in natural juice (440 ml)

  • 5 tablespoons balsamic vinegar

  • 4 tablespoons brown sugar

  • 2 tablespoons grated ginger

  • 3 tablespoons corn flour

  • ¼ teaspoon salt

  • ½ cup water

Method

  • PORK
  • Make a slit in the fat to prevent the chop from curling. There is no need to trim the fat.
  • Place the chops on a bottom tray, then turn the setting to  200°C / 392°F for 30 minutes. Turn the chops after 15 minutes and continue frying until the time is done.
  • Take out the pork chops and allow to rest for 2 minutes before serving.
  • SAUCE
  • Add all the ingredients in a small saucepan and mix well. Place on medium heat and keep on stirring over the heat until the sauce has a thick consistency.
