Baking cookies is one of those really fun experiences that you can do alone or with your family. When you have a gift box to give away, ready to go to a bake sale or just want some snacks, you should try these no-flour cookies. We don’t just have one flavour for you either, we’ve got six amazing combinations for you. They are easily turned into vegan and vegetarian options with no gluten either, and you can make them sugar-free.

Oats are a great way to make cookies and is a healthy way of doing it too. The nuts are healthy and provide important fats and protein to each cookie. You can substitute the dairy for your choice of vegan alternative and also add sweetener instead of sugar, or leave it out altogether. We’ve got six great varieties for you and each batch makes 12 cookies:

Ingredients

  • For the basic no flour cookie base
  • 1 1⁄2 cups 1 1⁄2 gluten free rolled oats any rolled oats work

  • 1⁄2 tsp 1⁄2 baking soda

  • 1⁄2 tsp 1⁄2 baking powder

  • 1⁄4 cup 1⁄4 sugar of choice white, brown, coconut or sugar free

  • 1⁄4 tsp 1⁄4 salt

  • 2 tbsp 2 coconut oil can substitute for butter/butter of choice

  • 1⁄2 cup 1⁄2 milk of choice

  • 1⁄4 cup 1⁄4 chocolate chips of choice or mix-ins of choice

  • Oatmeal raisin cookies
  • 1⁄4 cup 1⁄4 raisins

  • 1 tsp 1 cinnamon

  • 1⁄4 tsp 1⁄4 nutmeg

  • White chocolate and macadamia nut cookies
  • 1⁄4 cup 1⁄4 dairy free white chocolate chips or standard white chocolate chips

  • 2 tbsp 2 macadamia nuts chopped

  • White chocolate and cranberry cookies
  • 1⁄4 cup 1⁄4 dairy free white chocolate chips

  • 1⁄4 cup 1⁄4 unsweetened dried cranberries

  • Pecan and coconut cookies
  • 1⁄4 cup 1⁄4 pecans chopped

  • 2 tbsp 2 chocolate chips of choice

  • 2 tbsp 2 unsweetened shredded coconut

  • Triple chocolate cookies
  • 1⁄4 cup 1⁄4 mixed chocolate chips semi-sweet, dark, white, etc.

  • Chocolate chunk cookies
  • 1⁄4 cup 1⁄4 chocolate chunks of choice

Method

  • Preheat the oven to 180°C. Line a large baking tray or cookie sheet with parchment paper and set aside.
  • In a high-speed blender or food processor, add your oats, baking powder, baking soda, salt, and sugar and blend until combined and the oats are coarse.
  • In a large mixing bowl, add your blender ingredients. Add your coconut oil (or butter), vanilla extract, and milk and mix until combined.
  • Fold through your mix-ins of choice (depending on which cookie option you choose), reserving a few to top the cookies with.
  • Form 12 small balls of dough onto the lined tray or cookie sheet. Press on each ball into a cookie shape and top with extra mix-in ingredients.
  • Bake for 10 minutes, before removing from the oven and letting cool on the pan completely.
