When cooking outside like South Africans love to do, you need to find the best way to cook as much in one go as possible, and that’s how the skewer or sosatie began. However, we’re far from the first people to invent it, and if you’ve got some Portuguese heritage, you’ve probably had some Espetadas. Not only will you love these tender, fully flavoured beef sirloin espetadas, but you’ll also be making Milho frito, a classic Madeira side dish.

The beef espetadas include chorizo, a spicy sausage along with some vegetables on the skewers. The milho frito is a Madeiran side dish made of cornmeal, finely sliced collard greens before being cooled and cut into cubes before being fried like halloumi. The recipe video below shows you how, step-by-step.
