There’s just something about having a fully-loaded sandwich for lunch, stacked with juicy meat and more of your favourite ingredients. It’s made even better when it’s a leftover sandwich that you’ve packed with leftovers from the fridge, so you don’t even need to work hard to make it. This pulled beef and onion sandwich with blue cheese is one of those sandwiches you’ll want to make a roast for just so that you can make this sandwich over and over again.
For the beef, a slow-cooked roast is the best as it’s easy to shred apart. A beef roast, lamb shanks and osso buco works wonders for this recipe. When you’re caramelizing the onions, add the beef in right at the end to heat it through before stacking your sandwich. Ciabatta bread works great for this recipe but whichever bread you use, pan fry it with some butter for some extra crunch and richness. The blue cheese adds more richness and is a tasty change away from the usual yellow cheese varieties.
