It’s been so cold recently that it actually snowed in Johannesburg, which means we were all indoors and needed comfort food. But the cold isn’t ending soon, so you have more than enough time to make this deliciously creamy homemade potato soup. This tasty winter dish is wholesome and perfect but also gives you a chance to get creative and make it your own by adding other tasty ingredients or enjoy the simplicity of the recipe below.

Homemade potato soup suggestions

The soup is made with some great aromatics like garlic but you’re welcome to add some carrots for colour and some sweetness too. Making sure your soup is seasoned well goes a long way and you can give it another kick by adding some chili flakes to your preferred taste. If you don’t have a large blender, an hand or immersion blender in the pot makes a big difference. You can also add some ham or cooked bacon for something meaty and serve it with some fresh bread.

This hearty and delicious potato soup is a family favourite.

Ingredients

  • 6 medium 6 potatoes, peeled and cubed

  • 1 1 onion, finely chopped

  • 1 clove 1 garlic, crushed

  • salt

  • freshly ground pepper

  • 1/2 tsp 1/2 dried chili flakes

  • 2 tbsp 2 chopped fresh parsley

  • 1 litre of hot water

  • 150 ml 150 cream

  • 15 ml 15 butter

  • 1 tsp 1 mixed herbs

Method

  • In a 2 litre saucepan, heat the butter. Fry the onions and garlic.
  • Add the cubed potatoes. Season to taste. Add the mixed herbs and chili flakes. Add the hot water. Place a lid on the pot and simmer for 25 minutes.
  • Remove the saucepan from the heat. Decant the soup into a glass blender. Blend the soup until smooth.
  • Pour the hot soup into bowls, add cream and garnish with parsley.
