Do you enjoy unconventional baking recipes? Do you love coffee and want everything to resemble coffee? Mocha cake is a rich, light recipe that is perfect for tea time, important events and even birthdays. Mocha usually refers to a chocolate and coffee combination often found in a warm beverage at your favourite coffee shop and sometimes comes in a milkshake too. So, why wouldn’t you want these flavours in a cake, right?

Mocha cake suggestions

Often, when you make chocolate desserts, a small bit of coffee can improve the chocolate flavour. In our mocha tart or cake, we’ve made them similar to highlight both flavours for the best experience. The icing is super light and rich with the mocha. You can also sprinkle some cocoa over the top as you garnish with nuts and/or some dark chocolate shavings. Enjoy a slice with your favourite cup of tea or coffee with friends.

Ingredients

  • 4 4 eggs

  • 1 tbsp 1 mocha essence or cold strong coffee

  • 1-2 tsp 1-2 cocoa powder

  • 1 cup 1 sugar

  • 1 cup 1 flour

  • 1 tsp 1 baking powder

  • 1 small pinch 1 salt

  • For the icing and topping
  • 225 ml 225 cream

  • ¾ cup ¾ icing sugar

  • 1 tsp 1 mocha essence

  • chopped nuts

Method

  • Separate the eggs. Beat the yolks until light.
  • Gradually add mocha, essence or coffee, cocoa, sugar and small pinch of salt while continuously beating the batter.
  • Add sifted flour and baking powder.
  • Beat the egg whites until they form stiff peaks.
  • Fold the beaten egg whites into the batter. Don’t over-mix.
  • Spread the batter into 2 well-buttered cake pans.
  • Bake at 160°C for 8-10 minutes and turn up the heat to 190°C for the last 5 minutes. (It’s ready when a knife pushed into the cake comes out clean)
  • For the icing and topping
  • Whip the cream and then add the icing sugar and mocha essence. Mix well without deflating the cream too much.
  • Spread between cooled cake layers and on top.
  • Decorate the cake with chopped nuts like pecan or almonds.
