Banana bread is a combination of sweet and savoury baking that has become more popular than ever. Our easy banana bread recipe is everything you wish it could be with accessible ingredients, flavour and texture.

Easy banana bread tips

The reason for using overripe bananas is because they are softer and have a better texture when mashed. They also have a slightly sharper taste which stays around after baking. You can add many different additions to your bread like chocolate chips, chopped walnuts, pecan nuts or almonds, etc. This bread is great with a generous spread of butter or with fruit and whipped cream.The recipe is simple enough to get as creative as you want to be.

Ingredients

  • 225 g butter

  • ¾ cup sugar

  • 2 eggs

  • 3 overripe bananas, msahsed

  • cups flour

  • 1 tsp bicarb

  • 1 tsp baking powder

  • lemon juice

  • 1 ;inch salt

  • ½ cup pecan nuts or almonds

Method

  • Cream together the sugar and butter.
  • Add beaten eggs, mashed bananas and lemon juice.
  • Line a loaf tin with greased paper and bake for 1 hour in 160°C oven.
