It’s that time of year when we tend to look at our food a bit more closely as we work for that summer beach body. Summertime calls for light meals that still provide all of the healthy nutrients you need for the day while still tasting great. Stir-fry is a great way to get everything you need into one meal. Cooking at the higher heat also makes sure you don’t lose any nutrients in water and evaporation. Our Healthy Pork Stir-Fry & Noodles recipe is great for anybody looking after their health or for a mid-week family meal.

Pork provides great protein to your meal and some good ol’ fat but you can cut the fat away easily. Bell peppers of all different colours provide different flavours and nutrients and are very low in calories. Your Healthy Pork Stir-Fry & Noodles also has other great veggies for important vitamins. Noodles provide some carbs for energy and workout recovery if you have it after training. Each serving, of which there are two in this recipe, only consists of 340 calories, making it nice and light too.

Healthy Pork Stir-Fry & Noodles Recipe

Ingredients

  • 180 g Pork loin, diced

  • 1 tsp Olive oil

  • 2 cloves Garlic, fresh

  • 2 medium Carrots, sliced

  • 3 stalks Spring onion

  • 1 small Red bell pepper

  • 1 small Yellow bell pepper

  • 50 g Wholewheat noodles, raw

  • 1 large Egg white

  • 3 tbsp Corn flour

  • 1 tsp Soy sauce, reduced-sodium

  • 1 tbsp White wine

  • 2 tsp Honey

  • cup Water

Method

  • Prepare the noodles per package instructions.
  • In a medium bowl, beat the egg white lightly with a fork. Beat in 2 tablespoons of cornflour until thick and smooth. Stir in the pork so that each piece is evenly coated, then set aside.
  • To make the sauce: mix together the soy sauce, ½ tablespoon olive oil, vinegar, honey, and 1 tablespoon cornflour in a small bowl. Add the water and set it aside.
  • Blanch the carrots in boiling water for about 2 minutes until tender but still crisp. Remove and place in a bowl of ice water. Remove from the ice water after a few minutes and set aside.
  • Place a pan over high heat and add the rest of the oil. Add the pork and brown all over. Remove from the heat when done and set aside.
  • Add the garlic, ginger, spring onions and peppers to the same pan used for the pork.
  • Sauté until the onions start to brown. Add the sauce and bring to a boil. Then stir in the carrot and pork. Cook until thickened and heated through. Remove the pan from the heat. Serve warm with the noodles.
