Are you one of the many South Africans who love throwing some meat on the braai and celebrating anything and everything? Bring along your Mutton Chops with Thyme & Lemon and watch everybody flock around the fire to see what they’re smelling. It will become the centre-piece in between all of the other great meats on the braai. We love lighting a fire in summer and just celebrating the season with friends, family, drinks, conversation and food. Mutton chops are always a winner and it’s your turn to bring them along.

Mutton can be quite rich and so fresh lemon juice and zest cut through the richness a bit and lift the flavour even more. Thyme is a great aromatic herb that brings greatness to almost any dish as well. This is a very simple mutton chop recipe. For sides, you can’t go wrong with some roasted vegetables, garlic bread or mashed potatoes. Remember to keep some of the lemon juice to squeeze over the chops while they are on the braai.

Mutton Chops with Thyme & Lemon Recipe

Ingredients

  • 1 kg 1 mutton chops

  • salt and pepper

  • barbecue spice (optional)

  • 2 2 lemons (halved)

  • 1 tbsp 1 chopped fresh thyme

  • t tsp t chopped garlic

  • 1 tsp 1 olive oil

Method

  • Rub the chops with salt, pepper, thyme and olive oil. Squeeze 1 lemon over the chops. Place in a container and allow to marinate for 1 hour before the braai.
  • Wait for the coals to become gentle enough to grill the chops. Squeeze the remaining lemon over the chops while on the grill. Season to taste, if needed. Grill until cooked well.
  • Serve with your favourite side dishes and salads.
