You won’t buy rusks for your morning coffee anymore. Our homemade healthy bran rusk recipe is the perfect way to start your morning as long as you don’t drop it into your cup.

In South Africa, we love coffee and we have our own version of coffee and biscuits. Bran rusks are a staple of the South African coffee breaks and are a part of our vast culture. We understand the feeling of dipping the rusk for too long and either burning your fingers getting it out of the cup. You probably remember that grandma made her own health rusks and our healthy bran rusks will bring back those lovely memories.

Healthy bran rusks baking tips

This crumbly bran rusk recipe is very easy to make and you probably have most of the ingredients in your pantry and fridge. It’s a great recipe to make on the weekend or during school holidays with the kids this winter. Most people have small raisins in their rusks but cranberries can add an extra layer of flavour and fibre. They’re perfect with a cup of coffee or tea with your friends or as a quick breakfast before rushing out of the door.

Ingredients

  • 1 kg bran

  • 1 kg cake flour

  • 22.5 ml baking powder

  • 450 ml brown sugar

  • ½ tsp salt

  • 750 g soft butter

  • 250 ml water

  • 4 eggs

  • 750 ml buttermilk

  • 1 cup sunflower / other seeds

  • 1 cup raisins/cranberries

  • 1 cup toasted chopped nuts

Method

  • Preheat the oven to 180°C.
  • Lightly grease a rusk pan (or shallow rimmed baking sheet).
  • Mix the dry ingredients together in a mixing bowl.
  • Rub soft Stork Bake or soft butter into the dry ingredients with your fingertips until it looks like breadcrumbs.
  • Beat water, eggs and buttermilk. Stir egg mixture into dry ingredients until well blended.
  • Press into a well-greased rusk pan and flat out evenly and mark with a rusk marker.
  • Bake for 45 minutes or until baked through.
  • Remove from the pan cut into rusks size.
  • Heat oven to 100°C and dry rusks out for 6 – 8 hours or overnight.
  • Cool and pack in an airtight container.
