The winter months are here and what’s better on cold, potentially rainy days indoors? It’s a big batch of pancakes of course. In South Africa, pancakes or “pannekoek” refers to French-style crepes instead of flapjacks. They are light, thin pancakes which are very versatile when it comes to fillings but we know them mostly for a cinnamon sugar filling. Our South African pancakes recipe is great for cold days indoors with the family.

Suggestions for your South African pancakes

The pancake recipe is easy to make and very versatile when it comes to toppings and fillings. Go the full French way and add chocolate sauce or Nutella as afilling. Fill them with curry mince. Upgrade your mince-filled pancakes by making them a bit thicker, filling them with mince, top with cheese and put under the grill until golden. Go classic with cinnamon sugar and add some cream or ice cream on top. You can also make crepes Suzette if you’re brave enough.

Ingredients

  • 750 ml 750 cake flour

  • 3 large 3 eggs

  • 175 ml 175 oil

  • 25 ml 25 vinegar

  • 3 ml 3 salt

  • 15 ml 15 baking powder

  • 1000 ml 1000 water

  • cinnamon and sugar

Method

  • Beat the eggs until light and fluffy.
  • Pour in the cooking oil, vinegar and salt and beat well again.
  • Add the flour and whisk.
  • Put the baking powder in last and beat for another 1 minute.
  • Add the water after whisking the batter until it has the right consistency. If it is too thick add more water.
  • Allow the mixture to stand.
  • To ensure your frying pan is clean, rub well with salt to clean the surface.
  • Heat the pan over moderate heat, then wipe it with an oiled kitchen towel. Add some batter into the pan, tilting the pan to move the mixture around for a thin and even layer. If the pan is at the right temperature, the pancake should turn golden underneath after about 30 seconds and will be ready to turn.
  • Add cinnamon and sugar or any filling you prefer.
