When it’s time for a braai as Easter Weekend comes along, you need some heartwarming sides. You can cook almost anything on the fire and corn or “mielies” are often great for the occasion but not everybody eats them off the cob. Howe about making a fully-loaded salad with everything you love. This grilled sweetcorn salad is great for a braai but it’s also perfect for a full meal because you can add chicken and other great ingredients. It’s a great leftovers meal after the braai too.

The beautifully spiced grilled mielies recipe is perfect for making this salad. If you’ve had chicken on the braai, you’ll have even more smokey flavour to go along with the greatness that is bacon. If you’re feeling adventurous, try different proteins like some leftover boerewors or pork chops which also combine perfectly with this salad. It’s the perfect addition to any braai and a great one pan pantry salad is going to tickle your taste buds.

Ingredients

  • 2 large 2 grilled corns

  • 2 cups 2 white and red shredded coleslaw

  • 1 large 1 tomato (quartered)

  • 1 large 1 onion (thinly sliced)

  • 1 1 chicken breast (cubed or shredded)

  • ½ cup ½ bacon (grilled, drained & diced)

  • ½ cup ½ creamy salad dressing

  • ½ tsp ½ BBQ spice

  • salt & pepper

Method

  • In a large salad bowl, add the coleslaw. Drizzle the salad dressing over the coleslaw.
  • Layer the shredded or cubed chicken, bacon bits and onions. Arrange the sliced tomatoes around the dish.
  • Remove the corn kernels from the corn by cutting it off. In a bowl, mix the corn kernels with salt, pepper and BBQ spice.
  • Sprinkle the corn mixture over the salad.
