German pork soup: A traditional European recipe for winter

Do you love traditional winter soup recipes? This German pork recipe is simple, meaty and full of flavour and great nutrients.

Winter has it’s claws still firmly on South Africa but soup is always there to warm us up. A hearty soup is packed with meat and vegetables to keep us warm and healthy. This German pork soup might not be for everybody but you can easily adjust it to your taste buds. The pork trotter is the only thing that some won’t like but you can use fatty pork meat and bones for the recipe too.

So much of the depth in flavour comes from the pork bones and marrow. If you want a meatier soup, add some chunks of pork belly or other pork meat. You can also add potatoes and other vegetables alongside the split peas. Add some extra spices and chilies if you want to add some spice to it. Serve with some crusty bread or toasted rosties.

Ingredients

  • 1 1 pork trotter or fatty pork bones

  • 1 large 1 onion, studded with 3-4 closes

  • 3-4 3-4 cloves (for the onion)

  • 1-2 cups 1-2 Split peas

  • salt, pepper and sugar to tate

  • vinegar to taste

Method

  • Boil the pork trotter or bones for a few minutes and pour the water off.
  • Put all of the ingredients into a medium saucepan without the sugar and vinegar.
  • Fill the pot ¾ with water.
  • Simmer until thick and tender broth forms.
  • Before serving, add sugar and vinegar to taste.
