When you think of Italian food, you think about pizza, pasta and lots of parmasan cheese. However, there’s more to their amazing Mediterranean cuisine and chicken parmesan is one of them. Also known as Chicken parmigian, our baked chicken parmesan is a celebration of traditional cooking. Family cooking should be simple and with chicken, it’s easy to be simple and create something very tasty.

Baked chicken parmesan tips

Chicken parmesan is a simple crumbed chicken recipe with the flavour of parmesan cheese. You can serve yours with rice or roast vegetables for a whole family meal. The gravy is made as a simple roux or butter and flour gravy. You can scrape up the great burned bits of chicken crumbs from the bottom as you make the gravy in the same pan the chicken was backed in. Sprinkle some cheese over the chicken and bake for a few more minutes if you want to.

Ingredients

  • 4 4 Chicken portions

  • 75 g 75 Butter

  • 1 heaped tbsp 1 flour

  • 1 heaped tbsp 1 grated parmesan cheese

  • 1 pinch 1 ground turmeric

  • salt and pepper

  • Gravy
  • 1 tbsp 1 flour

  • 125 ml 125 cream

  • 125 ml 125 chicken stock

  • salt and pepper

Method

  • Melt butter in shallow roasting pan.
  • Dip pieces of chicken in the butter and coat with flour, cheese, salt and turmeric mixture.
  • Arrange in a single layer in a baking pan, skin -side down.
  • Bake uncovered for 20 minutes in 210°C oven.
  • Turn the chicken over and bake for another 10 minutes or until brown.
  • Place the chicken in a serving dish.
  • For the gravy
  • Sprinkle flour into buttery juices in roasting pan and stir over gentle heat for a few minutes until flour smell goes away.
  • Slowly add chicken stock while whisking until thick and creamy. Season the sauce.
  • Serve by covering with the gravy or on the side.
