Focaccia bread – The ultimate side dish

After tasting your own home-baked focaccia bread, you will want to bake it all the time – that is how addictive it is!

If you have ever tasted focaccia bread, you will know how much it adds to any meal. It is tasty, loaded with flavour and you can enjoy it with a variety of toppings.

Focaccia bread is basically a flat-leavened oven-baked Italian bread. It almost reminds one of pizza but it is thicker than pizza and more bread-like. The best thing about this delicious bread is that you can top it with any toppings of your choice.

For this recipe, we have used crushed garlic, coarse salt, herbs and feta cheese. However, you can also try it with spinach, feta and mushrooms. Or, if you would like to add something meaty, what about bacon? It is also incredibly delicious.

Preparing this recipe will take about two hours of your time, so make sure you have time to allow the dough to proof which is a very important step. After tasting your own home-baked focaccia bread, you will want to bake it all the time – that is how addictive it is!

Ingredients

  • 375 g cake flour

  • 500 ml water

  • ½ packet instant yeast

  • ½ teaspoon sugar

  • 350 g bread flour

  • 50 ml olive oil

  • 1 teaspoon salt

  • toppings of your choice

Method

  • Sift the cake flour, add warm water, yeast and sugar. Mix to make a sloppy sponge.
  • Rest the sponge for 30 minutes.
  • Add the rest of the dry ingredients and work to a soft, smooth dough.
  • Prove for 1 hour.
  • Knock down and shape into a deep rectangular tray. Press dough into tray using your knuckles and then make holes with fingertips.
  • Brush with olive oil and place toppings (crushed garlic, coarse salt, herbs, feta cheese etc.)
  • Proof until double in size.
  • Bake at 200°C until golden brown. About 20 minutes.
  • Slice and enjoy
