There are thousands of different styles of cakes but most of them start with a sponge. Sponge cake is a light, flavourful sponge cake that is slightly moist and airy, giving you the best platform for any toppings. Cake is a family, friends and party must-have and our Vanilla Sponge Cake is no different. It’s super easy to make and provides a great space to be creative.

Some of the best recipes are made from the simplest of ingredients and our Vanilla Sponge Cake is a perfect example. Vanilla adds that light but familiar flavour while the sponge is soft and airy. Get creative and serve slices of this tasty treat with some fruit and whipped cream as you sip on your tea or coffee. Be creative with your own icing decorations and candles if it’s a birthday. This recipe can be adapted for different pan sizes and cake styles.

Vanilla Sponge Cake Recipe

Ingredients

  • 200 g self-raising flour

  • 200 g butter extra for coating the cake tins

  • 160 g caster sugar

  • 3 large eggs

  • 1 tbsp vanilla extract

  • 4 tbsp milk

  • ½ tsp baking powder

Method

  • Preheat the oven at 180°C.
  • Prepare the baking tins (2 X 8-Inch), Grease cake tin and line the bottom with a parchment paper or ovenproof dish.
  • Using a hand mixer or stand mixer. Start by creaming the sugar and butter together until light and fluffy. This should be about 3 to 5 minutes
  • Then add the eggs one at a time along with the vanilla essence and mix until combined.
  • Add the flour and baking powder.
  • Using a wooden spoon or spatula, fold the flour into the mixture until well combined.
  • Lastly, add the milk and mix till well incorporated into the batter.
  • Divide the batter between the prepared tins and bake in the oven for between 25 to 30 minutes or until a skewer/cake tester comes out clean.
  • Remove cake from the oven and leave to cool (2 to 5 minutes), remove from the tin and place on a cooling rack.
